Dark Chocolate Covered Dates with Pecans

Lately, I've been incorporating dates into my diet, and I love how versatile they are! They add natural sweetness and a host of health benefits to my meals. Here's a delicious recipe I want to share with you:
Ingredients:
- 12 oz Medjool dates (about 12-15 dates, pitted)
- 1/2 cup pecan halves (plus extra for crumbling)
- 1 cup dark chocolate chips (for melting)
- 1/4 cup pecan crumbs (for topping)
- Sea salt (optional, for topping)
Instructions:
1. Stuff each date with a pecan half.
2. Melt the dark chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. (Alternatively, use a double boiler.)
3. Dip each date into the melted chocolate, ensuring it is fully coated, and allow any excess chocolate to drip off.
4. Place them on a baking sheet lined with parchment paper. Sprinkle the date bites with pecan crumbs and a bit of sea salt on top, if you like.
5. Chill in the fridge for about 30 minutes, or until the chocolate sets.
