Potato & Egg Salad

I came up with this recipe since I already had hard-boiled eggs and was looking for ways to use them.
Ingredients:
- Two medium potatoes
- Two hard-boiled eggs
- 1 Tbsp of Dijon Mustard
- 2 Tbsp of Mayonnaise
- 1/2 Tsp of olive oil
- 1 Tbsp of Balsamic vinegar
- 1 Tsp of Italian seasoning
- 2 Tbsp of chopped walnuts
- Salt & Pepper to taste
Peel and cube the potatoes (about an inch thick). Add some salt and boil them for 15 minutes on medium heat. Drain them and put them in a large bowl. Add all the ingredients and mix everything. Finish with the hard-boiled eggs (cut into four pieces) and give them another stir.
It goes well with toasted wheat bread and olives.
